Hi, Russell! It will take 2-3 hours for the banana slices to fully freeze. They can be left in the freezer for up to 6 months. (They will brown a bit and may collect some freezer burn over time, but are safe to eat if stored properly.) The amount of cinnamon you add is up to you–but to prevent adding too much, I would add 1/8 tsp or 1/4 tsp at a time, tasting after each addition, until the flavor suits your taste. ~Marion :)
